Step 5

Let down 30g of Royal Icing with a little water and place into a piping bag fitted with a No.1 tip. Next, colour up 200g of Royal Icing using Black ProGel. Place a small amount of this into a piping bag fitted with a No.2 tip. Let the rest down with water to run out consistency and place into a large piping bag.

Step 6

Prepare 5 bowls and place 100g of Royal Icing in each. Colour with Purple, Navy Blue, Pink, Baby Blue and Turquoise ProGel. Then let down to run out consistency and place into piping bags.

Step 7

Pipe a border around each biscuit using the Black Royal Icing in the No.2 piping bag and leave to set.

Step 8

Knead 100g of Flower & Modelling Paste on a clean surface until soft and pliable. Lightly dust the surface with icing sugar and pin out the paste until paper thin. Cut out stars using the mini star cutter and leave to set. You will need 141 in total.

Step 9

To create the galaxy effect, fill in around the border with Black run out Royal Icing. Fill in the rest using a mixture of the other colours of run out Royal Icing, then swirl the colours together with a cocktail stick. Try mixing and matching different quantities of colours for different galaxy effects. Leave to set fully for at least 24 hours.

Step 10

Place the biscuits on some greaseproof paper. Load up a stiff bristled paintbrush with Light Silver Paint and splatter over the biscuits to complete the galaxy effect.

Step 11

With the White Royal Icing in the No.1 piping bag, attach the stars for each constellation. Once the stars are in place, join them up by piping lines. Leave to set.

Step 12

Once set, paint the constellations with Light Gold Paint and a fine paintbrush to finish.
