Butterfly and Ballet Shoes Cake

Baking ingredients

  • 150 g butter
  • 120 g chocolate - melted
  • 150 g sugar
  • 5 eggs
  • 150 g flour
  • 1 tsp baking powder
  • g Chocolate buttercream icing

Decorating ingredients

  • 1 kg Renshaw Ready to Roll Icing - for the 8" cake, your choice of colour
  • 500 g Renshaw Ready to Roll Icing - for the 6" cake, your choice of colour
  • 250 g Renshaw Rose Pink Flower & Modelling Paste
  • 1 metre satin ribbon

Instructions

Step 1

Preheat the oven to 180°C / 160°C for fan oven / Gas mark 4. Grease a 20cm / 8" round cake tin and line with baking paper.

Step 2

Melt chocolate in a heatproof dish and set aside to cool. Beat the butter and sugar together until light and fluffy. Add eggs and mix well.

Step 3

Add flour and baking powder and mix until well blended. Add the melted chocolate. Pour in the tin and bake for 35 mins or until skewer comes out clean. Leave to cool.

Step 4

For chocolate buttercream icing, beat butter until pale, add icing sugar and beat well. Add in cocoa powder and beat until well blended. Adjust sweetness with adding extra icing sugar if needed.

Step 5

If you would like a 2 tier cake, repeat the cake batter in a 6" round pan and halve the icing sugar ingredients.

Step 6

Once the cake(s) are cooled completely, fill and cover with the chocolate buttercream icing. Cover the cake(s) with your chosen colour of Renshaw Ready to Roll Icing; 1kg for the bottom 8" and 500g for the top 6".

Making the Ballet Shoes:

Step 7

Knead well and roll out your pink flower paste to about 2-3mm. Use the shoe template to cut out your shoes with a knife.

Step 8

Line the sole with edible glue and stick the toe piece along the edge of the sole. Use a cotton ball inside the toe to keep it rounded. Shoes can be dried flat, or if you would like the shoes upright, delicately prop them on pointe and rest against bubble wrap. Insert wire or toothpicks through toes to hold together. Once completely dry (allow 24 hrs) place the shoes on top of the cake.

Step 9

You can either make your own butterflies with the pink flower paste and butterfly cutter, or buy ready made butterfly decorations. Attach the butterflies to the cake where you'd like them to sit using edible glue.
