Ah, the classic Christmas Cake; the centrepiece of the Christmas table and ultimate festive baking achievement. Steeped in tradition, here at Renshaw we love the mountains of fruit and warming mixed spiced scents that fill the kitchen, followed by feeding the cake (and yourself) with brandy, rum or cognac in the weeks leading up to Christmas day is all part of the fun.
The real joy lies in the decorating. Ensconced in marzipan to impart that delicate almond flavour and wrapped, gift like, in fondant icing, the snowy white cake covering is the perfect canvas on which to paint your chosen Christmas scene. Santa Claus modelled out of sugar paste, nativity motifs hand painted over ready to roll icing or intricate snowflake lace work piped in royal icing. Sugar craft is the gift that keeps on giving.
