Baking ingredients

  • 54 oz Butter
  • 54 oz Sugar
  • 63 oz Flour
  • 54 oz Eggs

Decorating ingredients

  • 7 kg Rolled icing
  • 500 g Petal paste
  • 1500 g Butter
  • 2 kg Icing sugar

Instructions

Step 1

Cream butter and sugar till sugar is not grainy.

Step 2

Add eggs and whisk, adding flour a little at a time until it's all combined.

Step 3

Bake and let the cakes cool.

Step 4

Slice cakes and fill with jam. Pipe a ring of butter cream around edges to stop jam leaking out.

Step 5

Stack cakes up and cover in butter cream. Apply a thin coat to start with then when it's set, add a thicker coat. The images are showing the 2 tiered christening cake as well.

Step 6

The top cake was covered in fondant and petal paste roses and fondant pearls. Demonties were added as well as a demontied ribbon.

Step 7

The second tier is covered in fondant and add a fondant frill which is made with a silicone mould and add more demontied ribbon.

Step 8

The third one down was made with a patterned roller. Roll out the fondant using the roller and add another demontied ribbon.

Step 9

The bottom tier was covered in fondant and I made loads of little fancy demonties out of icing using a silicon mould which I placed all around the cake, then added demontied ribbon.
