‘The Bill’ Police Hat Cake

Baking ingredients

  • 8 oz caster sugar
  • 8 oz margarine
  • 8 oz all purpose flour
  • 4 eggs
  • 1 tsp vanilla essence

Decorating ingredients

  • 500 g Renshaw White Ready to Roll Icing (if colouring yourself)
  • 1 tbsp Black food colouring
  • 500 g Renshaw Jet Black Ready to Roll Icing (if you want ready-coloured icing)
  • 4 oz icing sugar
  • 2 oz butter

Instructions

Step 1

Mix your cake mixture and bake. Once cool, cut cake in half, fill with buttercream, layer the two halves together and spread with a thin layer of more buttercream.

Step 2

Knead the black food colouring in 3/4 of the fondant until smooth and pliable. Roll it out on a lightly dusted surface and lift over the cake. If you’re using ready-made black icing, knead and roll as usual.

Step 3

Make sure you leave extra icing around the base of the cake for the rim, and turn the edges upwards.

Step 4

Roll out the remaining black icing and cut out squares ready to place around the base of the hat later. Set these to one side.

Step 5

Clean your work surface and hands before using the white icing to prevent any colour mixing with it.

Step 6

Roll out a strip of white icing and place around the bottom of the hat, then add the black squares for a checkers look. Finish with a toy badge at the front, or a fondant one if you have time.
