Strawberry Dream Cupcakes
Serve up some strawberry cupcakes to enjoy with friends and family whilst watching Wimbledon.

Baking ingredients
- 20 g freeze dried strawberries
- 150 g caster sugar
- 150 g self-raising flour
- 150 g butter or margarine
Decorating ingredients
- 400 g Renshaw Vanilla Frosting
- Rainbow Dust Strawberry Colour ProGel
- 250 g Renshaw Poppy Red Ready to Roll Icing
- 250 g Renshaw Bottle Green Ready to Roll Icing

Instructions
Baking the cupcakes:
Step 1
Line a 12-hole cupcake pan with 12 paper cases. Preheat the oven to 160?c / Gas 3.
Step 2
Crush the dried strawberries in a bowl with the end of your rolling pin or in a pestle and mortar, until it's in fine pieces.
Step 3
In a bowl, cream together the butter and sugar until light and fluffy.
Step 4
Slowly beat the eggs into the mixture. If the mixture begins to curdle add 1 table spoon of flour. Add in the crushed strawberries. Once combined add the remaining flour and fold in.
Step 5
Divide the mixture between the cases. Bake for 20 – 25 minutes or until golden and spring back when pressed. Allow to cool for 2 minutes and then remove the cupcakes from the pan and cool on a wire rack.
Decorating the cupcakes:
Step 6
In a bowl mix 3 tbsps. Renshaw Vanilla frosting with a small drop of Rainbow Dust Strawberry Progel. Add more or less of the food colouring dependant on your chosen shade of colour.
Step 7
Using a disposable piping bag, snap off the end and insert a 2D piping nozzle.
Step 8
Line the sides of the piping bag with a thin layer of the coloured frosting. Fill the centre of the piping bag with frosting straight from the pot.
Step 9
Pipe a rose on the top of the cupcakes. Start to pipe in the centre and pipe around the top of the cupcake.
Step 10
To make the mini strawberries, make large pea sized cones with Poppy Red Icing and add markings using the point of a cocktail stick or pointed tool. Set to one side.
Step 11
Roll out the Bottle Green icing on a clean, dry surface dusted with icing sugar. Use a small blossom cutter to cute out shapes and attach these to the strawberry with a small amount of water.
Step 12
Place onto the piped flower at the outside join.
