Rainbow Bread

This fun and vibrant rainbow bread is the perfect activity to keep the kids busy and makes for an entertaining afternoon snack when made in the morning. Enjoy with your favourite flavoured glitter jam.

Baking ingredients

  • 500 g Strong White Bread Flour
  • 7 g Fast Action Yeast
  • 10 g Sugar
  • 10 g Salt
  • 15 g Butter
  • 290 ml Luke-Warm Water
  • Oil Spray
  • Red Rainbow Dust ProGel
  • Orange Rainbow Dust ProGel
  • Yellow Rainbow Dust ProGel
  • Lime Green Rainbow Dust ProGel
  • Sky Blue Rainbow Dust ProGel
  • Purple Rainbow Dust ProGel
  • Pink Rainbow Dust ProGel

Instructions

Prepare Your Equipment:

Step 1

You will need: a large bowl, 7 small bowls, a knife or Renshaw scraper, clingfilm, a Kitchen Aid mixer fitted with dough hook, and a 2lb loaf tin.

Baking The Bread:

Step 2

Place the flour, sugar and salt into a mixing bowl. Mix thoroughly until combined.

Step 3

Rub the butter into the flour until it resembles breadcrumbs.

Step 4

Add the dried yeast and mix through.

Step 5

Add the water and mix slowly until combined. If it feels dry add a drop more water.

Step 6

Either knead by hand for 10 mins on a floured surface or for 5-8 mins on a mixer fitted with a dough hook.

Step 7

Divide the dough into 8 pieces.

Step 8

Split the 8th piece between the other 7. Store under cling film sprayed with oil to prevent a skin forming.

Colouring the dough:

Step 9

In turn, knead a small amount of ProGel into each section of dough. Make an indent in the centre to contain the ProGel food colouring.

Step 10

Fold into the centre until the colour starts to come through. Then, hold the edge of the dough with one hand and push the dough away from you with the other hand. Roll the dough back up and do a ¼ turn. Repeat until the colour of the dough is consistent.

Step 11

Place each piece of coloured dough into a small bowl sprayed with oil. Cover with cling film sprayed with oil. Allow to prove until double in size, approximately 1 hr.

Step 12

Knock back the dough, by folding into the centre around 5 times.

Step 13

Pin the pink dough into a rectangle the size of the loaf tin base.

Step 14

Repeat step 13 for each colour, layering them on top of each other.

Step 15

Spray the loaf tin with oil, add the dough and loosely cover with cling film sprayed with oil, allow to prove for approximately 1 hr or until double in size.

Step 16

Bake in a preheated oven at 200°c for 30-35 mins. Remove from the oven, allowing to cool slightly then transfer to a wire rack. The bread will sound hollow when tapped on the base.

Step 17

For the Glitter Jam: mix 2 tbsp of your favourite Jam with ½ tsp Rainbow Dust Edible Glitter. Gently mix through.
