Passion Fruit and Peach Cupcakes

Makes 35 Cupcakes.

Baking ingredients

  • 1000 g Vanilla Crème Cake Mix
  • 800 g Peach Jam

Decorating ingredients

  • 333 g Butter
  • 333 g Icing Sugar
  • 333 g Renshaw Blendesi
  • 2 tsp Passion Fruit Flavouring
  • 1 tsp Yellow Colouring
  • 60 g Sprinkles


Baking the Cupcakes:

Step 1

Make up the Vanilla Crème Cake as per manufacturer’s instructions.

Step 2

Bake the cupcakes at 180ºC and allow to cool.

Step 3

Using a Cupcake corer, cut the centres of each of the cupcakes. Keeping the sponge to one side.

Step 4

Inject the peach jam into each of the cupcakes. Place the sponge piece back into the cupcake.

Decorating the Cupcakes:

Step 5

Using an electric mixer place the Butter, Icing Sugar, and Renshaw Blendesi in the bowl and attach the beater. Beat for 5 minutes, until all the ingredients are thoroughly mixed. Scrape down.

Step 6

Add the Passion fruit flavour and yellow colour and mix for a further 2 minutes.

Step 7

Using a piping bag with a star nozzle, pipe on top of each of the cupcake.

Step 8

Decorate with sprinkles.
