Serves

20 people

Baking ingredients

  • 6 eggs
  • 360 g self-raising flour
  • 360 g margarine
  • 360 g caster sugar
  • 1 tsp vanilla extract
  • 5-6 tbsp jam of your choice
  • 750 g buttercream

Decorating ingredients

  • 250 g Renshaw Grey Ready to Roll Icing
  • 1 kg Renshaw Atlantic Blue Ready to Roll Icing
  • 500 g Renshaw Poppy Red Ready to Roll Icing
  • 250 g Renshaw Turquoise Ready to Roll Fondant Icing

Instructions

Step 1

Mix the Victoria sponge ingredients in a bowl then split into 6 equal parts, and bake in 6 inch tins. They will take roughly 20 mins at 200°C/gas mark 6.

Step 2

Once cooled, fill with jam and buttercream and carve to make a head shape, including the ridge for the top of his head, then crumb coat.

Step 3

Once the crumb coat has hardened, knead and roll out the grey and turquoise icing. Cut out face from the grey icing and the eyes from the turquoise, and place these on the cake.

Step 4

Cover the top and sides of the head in blue icing (I did this from 2 pieces). Add details around eyes and on mask, then add a grey fin across the top of the head.

Step 5

Roll out a sheet of red fondant and place over the cake board. Transfer the head to the board.

Step 6

Roll out blue icing and cut out the 'ear' pieces, let them set then glue them together and fasten them to the cake (you'll probably need a couple of tooth picks for this).
