Muesli Almond Slice

Baking ingredients

  • 560 g Butter
  • 560 g Renshaw Macaroona or Renmac
  • 560 g Whole Egg
  • 620 g Rolled Oats
  • 1.2 kg Sultanas
  • 500 g Apricot Jam
  • 250 g Flaked Hazelnuts
  • 1.3 kg Plain Flour (Sweet Pastry)
  • 200 g Corn Flour (Sweet Pastry)
  • 500 g Caster Sugar (Sweet Pastry)
  • 1 kg Butter (Sweet Pastry)
  • 125 g Whole Egg (Sweet Pastry)

Decorating ingredients

  • 250 g Nibbed Almonds
  • 250 g Flaked Hazelnuts
  • 500 g Rolled Oats
  • 750 g Demerara Sugar


Making the Sweet Pastry:

Step 1

Beat butter and caster sugar until light in texture.

Step 2

Add one third of the egg and beat in.

Step 3

Sieve plain and corn flour together.

Step 4

Add the flour to the butter and sugar and mix on low speed to a crumb.

Step 5

Stream rest of egg into the crumb and mix on slow speed till pastry leaves sides of bowl being careful not to over mix.

Assembling the Slice (Makes 1 18x30" Baking Tray):

Step 6

Pin out sweet pastry to approx. 5 mm thickness and line tray.

Step 7

Cream the butter and Renshaw Macaroona together. Scrape down.

Step 8

Slowly add the eggs, being careful so that the mix doesn’t split. Scrape down.

Step 9

Mix the rolled oats, flaked hazelnuts and sultanas together. Add to the batter.

Step 10

Deposit the batter into the tray, spread the mix until a smooth surface is achieved, mix all the topping ingredients together and liberally sprinkle over the top of the batter.

Step 11

Bake at 180ºC for 35-40 minutes.

Step 12

Allow to cool and cut into required portion slices.
