Baking ingredients
- 8 large eggs
- 1 lb caster sugar
- 1 lb butter
- 1 lb self-raising flour, sieved
- 4 tsp baking powder
- 1 tsp vanilla extract
Decorating ingredients
- 1 kg Renshaw White Ready to Roll Icing
- 1 tbsp Green food gel colouring
- 1 tsp Red food gel colouring
- 1 tsp Grey food gel colouring
- 500 g strawberry jam
- 200 g butter
- 200 g icing sugar

Instructions
Step 1
Preheat the oven to 180°C. Grease and line 2 x 30cm round cake tins. Make a victoria sponge. Cream the butter, sugar and vanilla together. Add the eggs a little at a time. Fold the flour and baking powder into the egg mixture. Pour into the prepared tins and bake for 25 mins. Check after 20 mins. Once baked allow to cool at room temperature.

Step 4
Cut each sponge in half so you have 4 semi-circles. Spread jam on the sides of each one and lay them against each other standing up atop of a cake board.
Step 5
Carefully knead 600g of the white icing to soften it. Add in a little of the green food gel until it's the shade of grass. Roll out to the thickness of a pound coin. Drape the fondant over the cake and smooth out with the palm of your hand to remove any air bubbles. Cut around the edge of the cake board to create a smooth edge.
Step 6
Take 200g of the remaining white icing and colour it a darker shade of green. These will be the "Beams" of the house. Roll this out to 1cm thick and cut to shape around the edge of the house.
Step 7
With the remaining fondant colour it grey. You'll use this to create the stepping stones and the door. Roll the icing out to 1/2cm thickness. Cut out a 10cm ring, spread a little jam on it and stick it to the front of the house. Cut out different sized rings from 1.5cm to 3cm. Arrange these to form a path from the edge of the cake board to the door.
Step 8
Add red food gel to any extra icing and use this for extra detail around the door.
Step 9
Combine the 200g of butter and 200g of sugar to create a buttercream. Beat until light and fluffy. Add in a little green food gel and pipe around each edge of the house to create grass.
Step 10
Serve the cake by cutting into wedges. Enjoy!
