Burger Cupcakes Recipe
These chocolate frosting filled burger cupcakes would be perfect for fun baking with kids activities and a great treat at a BBQ, birthday party, or to celebrate Father’s Day!

Baking ingredients
- 100 g self-raising flour
- 100 g caster sugar
- 100 g butter
- 2 medium eggs – beaten
Decorating ingredients
- 250 g Renshaw Lincoln Green Ready to Roll Icing
- 400 g Renshaw Chocolate Flavour Frosting
- Royal Icing
- Rainbow Dust ProGel Red
- Rainbow Dust ProGel Green

Instructions
Baking Instructions:
Step 1
Preheat the oven to 180°C/350°F/gas mark 4.
Step 2
Line a cup cake tray with 12 paper cases.
Step 3
Sieve the self-raising flour into a mixing bowl, add the caster sugar and butter, then slowly mix in the beaten eggs.
Step 4
Whisk the mixture for approximately two minutes until smooth and creamy.
Step 5
Spoon the mixture into the cupcake cases until they are half full.
Step 6
Bake for 10 to 15 minutes and remove when light, fluffy and golden brown.
Decorating Instructions:

Once the cupcakes have cooled, remove each from the paper cases used to bake them in.
Step 8
Cut in half carefully with a sharp serrated knife.
Step 9
Knead and roll out the Renshaw Lincoln Green Ready to Roll Icing on a work surface lightly dusted with icing sugar. Using a fluted cookie cutter slightly larger in size than your cupcakes, cut out twelve circular shapes to create your burger lettuce.
Step 10
On the base half of each cupcake, apply a small amount of Renshaw Chocolate Frosting and stick the green icing lettuce on top.
Step 11
Pipe a round circle of Renshaw Chocolate Flavour Frosting on top of the green icing lettuce to create the burger.
Step 12
Colour the Royal Icing with small drops of Rainbow Dust ProGels and fill into separate piping bags. Pipe on to the frosting to create Ketchup and Mustard.
Step 13
Take the top half of each cupcake and sandwich on top of the piped icing.
