For a quick DIY version use store made cookies, or if you are stuck for recipe ideas try out the BBC Good Food Gooey Chocolate Cherry Cookies. Finally finish by choosing an ice cream filling of your choice and sprinkle with your favourite toppings, before sandwiching together.

Top Tip 🌟 – To stop your ice-cream from dripping, use Renshaw Belgian Chocolate Ready To Roll Icing and roll to a size bigger than your cookie. Then fold into a taco shape to hold your sandwich in place and catch any melting ice-cream.
