Mother’s Day Bakes

Mother’s day, the one day a year where the busy mums, helpful grandma’s and every other special lady in our life gets to put their feet up and relax.

Here at Renshaw, we believe that one of the easiest and most thoughtful presents for the awesome mother in your life is baking them something sweet. It doesn’t have to be extravagant and you don’t need to have the skill set of Mary Berry. We’ve got a range of recipes that everyone can make! Fondant Rose Shortbread Biscuits

These simple but pretty Fondant Rose shortbread biscuits are a quick way of making something sweet. Why not spread the love between generations and get the younger ones involved, creating their own flowers and decorations. There are many different kinds flower cutters and plungers out there, mix it up and use a combination of a few to put your own spin on them.

 

Coffee Cake with Sugar Paste Daisies

Aesthetically pleasing and a mature flavoured coffee cake, this recipe was made for Mothers day! Perfect for sharing with a cup of tea and spending some quality time with a special lady! This cake serves 12, so you can get the whole family together on Sunday, we’re sure the cake would be appreciated by all. A lot of effort goes into the decoration on this cake, so here’s a tip, prepare the decoration the day before your due to eat the cake, then on the day all you have to do is assemble all the different elements.

 

Royal Icing Flower Biscuits

A little more time, but time well spent. These delicious shortbread biscuits are topped with fondant, here you can choose whatever colours you fancy, go pretty with pastels, or bold with brights, get creative! But these biscuits are all about the decoration, simply pipe royal icing in a simple flower design, then take a wet brush and gently brush the icing to create this gorgeous brush embroidery effect. A large cake for a big occasion, why not get together with all the mums you know to share this floral bake. You could bake the cakes in advance, freeze, and when you want to assemble the cake, defrost, and start your decoration, you can freeze cakes up to 3 months, so you can save valuable time around the day! Want to get neat edges? Crumb coat your cake and chill it, before covering with the RTR Icing, this prevents the icing from sliding around on your buttercream. This cake is sure to be a winner!

 

Sunflower Cupcakes

These cupcakes are fool-proof, this super simple recipe means you can create an edible present that tastes delicious! It starts with a basic chocolate cake recipe, and the decoration is a simple piping pattern, finished off with chocolate sprinkles, so easy you could make them for any occasion. Feeling adventurous? Colour up a few small pots of frosting using ProGel, and create a whole bouquet, creating various petals and flowers.
