- 150g (5oz) unsalted butter - softened
- 150g (5oz) caster sugar
- 175g (6oz) self-raising flour
- 3 medium eggs - beaten
- 1 teaspoon vanilla extract
- Preheat the oven to 180°C / 350°F / gas mark 4.
- Line a 12 section cupcake with 12 paper cupcake cases.
- Put all the ingredients in a bowl and beat with a hand-held electric whisk until pale and creamy.
- Divide among the cupcake cases and bake for 15 to 20 minutes until risen and just firm to the touch.
- Leave to cool on a wire rack.
